  • 1/2 cup pomegranate seeds (from 1/2 of a large pomegranate)
  • For Dressing:
  • 1 shallot, minced (about 1 tablespoon)
  • 1 teaspoons dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1/4 cup olive oil
  • salt and freshly ground black pepper, to taste
  • For Goat Cheese:
  • 1 (8 ounce) log goat cheese, cold
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 cup panko bread crumbs
  • 2 tablespoons flat leaf parsley, minced
  • 1/2 teaspoon salt
  • 1/4 cup olive oil, for frying
