Pulled pork is basically a joint that has been cooked slowly and for such a long time that you can literally pull it apart with your fingers.



INGREDIENTS

  • 2 pork shoulder
  • kg fine sea salt
  • 100 light brown sugar
  • g cayenne pepper
  • 150 smoked paprika
  • g ground cumin
  • 1 tbsp black pepper
  • tbsp tomato ketchup
  • 1 white wine vinegar
  • tbsp garlic cloves, crushed
  • 1 soy sauce
  • tbsp lemon
  • 0.5 sliced gherkins
  • 200 barbecue sauce
  • g coleslaw
