• 1 cup packed dark-brown sugar
• 10 cups cubed brioche bread (from a 1-pound loaf)
• 1/2 teaspoon kosher salt
• 2 tablespoons butter, plus more for greasing
• 3 tablespoons bourbon
• 2 teaspoons pure vanilla extract
• 1 cup whole milk
