Jubilee Chicken Sandwiches

INGREDIENTS

• 2 2 chicken breasts, skin off
• 6 Sliced white bread
• 3 Mayonnaise
• tbsp Crème fraiche
• 3 lime, juices
• tbsp tablespoons coriander leaves, picked and chopped
• 1 mild red chilli, de-seeded and finely chopped
• 2 Slices of fresh ginger
• tbsp clove garlic, crushed
• 1 shallot, finely chopped
• 3 Olive oil
