- 100ml/3½fl oz red wine
- 1 star anise
- , to taste caster sugar
- 1 tbsp olive oil
- 1 small handful baby beetroot
- 100g/3½oz mixed mushrooms
- squeeze lemon juice
- 10g/½oz fresh flatleaf parsley
