  • 3 garlic cloves , crushed
  • thyme sprig, leaves picked

  • 300ml red wine
  • 1.4l chicken stock , hot
  • about 175g leftover ducks , shredded
  • 200g pack chestnut mushrooms , thickly sliced
  • handful flat-leaf parsley , chopped
