Ingredients

• 1 cinnamon stick
• 1 tsp cornflour
• ½ tsp white wine vinegar
• 100g bar plain chocolate (70%), broken into pieces
• 147ml carton double cream
• 175g caster sugar
• 2 tbsp clear honey
• 200g Greek yogurt , half fat
• 284ml carton whipping cream
• 3 medium egg whites
• 300ml good quality apple juice
• 8 small pears , peeled
