  • 2 bulbs fennel, finely sliced, herby tops preserved
  • sea salt

  • 1 risotto bianco recipe
  • 2 small dried chillies
  • 4 tablespoons good crumbly ricotta
  • zest and juice of 1 lemon
  • Parmesan cheese, for grating
