- 1 3/4 cups milk (whole milk works best)
- 2 eggs
- 2 tablespoons oil or melted butter
- 1 cup finely grated carrots (about 2 medium)
- maple syrup for serving
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/4 teaspoon cloves
- 1/4 teaspoon allspice
- 2 cups ricotta*
- 3-4 tablespoons honey
- 1 teaspoon of the above spice blend
- pinch of salt
- 1/2 cup walnuts
- 2 tablespoons of honey
- a few pinches of the spice blend
