  • 1 lb carrots, peeled and cut into 1' pieces*
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 3/4 cup dried cranberries, coarsly chopped
  • 3/4 cup pecans, toasted and coarsely chopped
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup dark brown sugar, packed
  • 1 1/4 cup vegetable oil
  • 2 packages (8 ounces each) cream cheese, at room temperature
  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 4 teaspoons vanilla extract or seeds scraped from 1 vanilla bean*
  • 1/4 teaspoon salt
  • 2 1/2 cups confectioner's sugar
