  • 3 limes
  • jalapeños, number to taste
  • spices: salt, pepper, paprika & cayenne
  • olive oil
  • 2 cups of sweet corn (fresh from a cob and blanched, or from a can in a pinch)
  • a small bunch cilantro
  • 1 ripe avocado
  • 2 medium sized, juicy tomatos
  • small corn tortillas, as many as you think you'll eat
  • 1.5 pounds tilapia, or another firm-fleshed white fish
  • red wine vinegar
