INGREDIENTS

  • 8-10 cloves garlic, peeled
  • 1 cup coarsely chopped onion
  • 3 tablespoons orange zest
  • 2 inches of ginger root peeled and cut in a few pieces.
  • 1/2 cup red miso paste
  • 1 cup orange juice concentrate (thawed)
  • 1/2 cup brown sugar
  • 4 racks baby back ribs
  • 2 tablespoons toasted sesame seed
  • 2 cups hoisin sauce
  • 1/2 cup honey
  • 1 tablespoon 5 spice powder
  • 1/2 cup rice wine vinegar
  • 1/2 cup hot pepper paste (I use korean gochujang)
  • 2 tablespoons toasted and then ground szechuan pepper
  • 1/4 cup guilin chili sauce
  • 1/2 cup toasted sesame oil
  • 1/4 cup scallions (white and green part) chopped
