- 2 tablespoons unsalted butter
- 1/8 teaspoon fresh gound nutmeg (optional) or 1 1/2 tablespoons chopped fresh tarragon (optional)
- 1/4 cup milk, preferably whole
- 2 cups fresh or frozen corn kernels (thawed if frozen)
- 1 teaspoon Kosher salt
- 1/2 teaspoon fresh ground black pepper
- 1 habanero pepper, seeded and finely chopped (see note above)
- 1/2 cup heavy cream
