Roasted Pears with Chai Spiced Creme Anglaise

INGREDIENTS

• 1 cup milk (2% or higher)
• 1 tablespoon Butter, diced.
• 1 Vanilla Bean
• 1 teaspoon Chai Tea
• 3 Cardamom Pods
• 5 Black Peppercorns
• 6 egg yolks
• 1 cup Pear Nectar
• 2 Cinnamon Sticks
• Juice of Half a Lemon
• 4 Large Pears (I've used bosc and comice, both worked great)
• 1 cup Heavy Cream
• 1/2 cup sugar
