  • 2 cups heavy cream
  • 6 large egg yolks
  • 8 T raw sugar
  • ½ cup light brown sugar
  • ½ tsp ground ginger
  • ¼ cup granulated sugar
  • ¾ tsp freshly grated nutmeg
  • Large pinch sea salt, plus more to finish
