Deep South Apple Cake

INGREDIENTS

• 1 1/4 teaspoon baking soda
• 1 1/2 cup cooking oil of your choice
• 3 cups flour
• 1 1/2 cup chopped pecans (optional)
• 2 eggs, well beaten
• 2 teaspoons vanilla extract
• 3 cups peeled and chopped fresh apples
• 2 cups sugar
• 1/2 juice of a lemon
• 1 teaspoon salt
