Name: Salted Brown Butter Cookies
Yield: Makes about 3 dozen (3- to 4-inch) cookies
Ingredients: 1 (1-pound) box confectioners' sugar; 1 1/2 sticks (3/4 cup) unsalted butter, cut into pieces; 1 teaspoon vanilla; 3/4 teaspoon fine sea salt; Decorative sugars and or salts, if desired; 1/4 cup cornstarch; 3/4 cup packed light brown sugar; 1/3 cup water; 2 cups all-purpose flour; 1 large egg; 4 teaspoons powdered egg whites (not reconstituted), such as Just Whites, or meringue powder (see Cooks' notes); 1 teaspoon fresh lemon juice
