I just love the smell of a chicken roasting in the oven when I have time to do it! This recipe came from the Women's Auxillary in Chicago, Illinois. The 30 minute chill time is included in the prep time!

- 5 garlic cloves
- 1 teaspoon fresh lemon juice
- 3 teaspoons extra virgin olive oil, divided
- 3 1/2 lbs chicken (whole)
- 1 lemon, cut in half
- 1/8 teaspoon salt
- 1 tablespoon black pepper, freshly ground
- curly endive lettuce
