- 2 green zucchini, 1/2-inch slices
- 1 medium yellow squash, 1/2-inch slices
- 16 ounces baby carrots
- 1 1/2 cups Brussels sprouts, sliced lengthwise and stems removed
- 2 medium red onions, sliced in large chunks
- 4 tablespoons butter, divided
- 1 tablespoon dried rosemary
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne
- 0.5 (10 1/2 ounce) can low sodium chicken broth
- salt & pepper, to taste
