INGREDIENTS

• 1 bunch Fresh Basil
• 7 tablespoons, 1 teaspoon, 5-â…› pinches Olive Oil, Divided
• 3-⅝ ounces, weight Flour
• 2 whole Eggs (you Could Do With One, But It’s Easier With 2)
• 3-⅝ ounces, weight Breadcrumbs
• 1 teaspoon Salt
• 1 teaspoon Freshly Ground Black Pepper
• 1 whole To 2 Whole Eggplant (try To Get It An Even Sized One, So You Have 6-8 Slices)
• 1 whole Tomatoes, Deseeded And Cut In Small Pieces (2 If The Tomatoes Are Small)
• 1 whole Ball Of Buffalo Mozzarella (quality Is Everything)
