- 3 medium sliced onions
- 2 minced garlic cloves
- 2 lbs medium potatoes, peeled and sliced into 1/4 inch rounds
- 2 lbs zucchini, sliced into 1/3 inch rounds
- 1 large red bell pepper, cut into thin rounds
- 1 large green bell pepper, cut into thin rounds
- salt
- pepper
- 1 1/2 cups chopped plum tomatoes, well drained
- 1/2 cup chopped parsley
- 1 teaspoon dried oregano
- water
