Quinoa is a delicate flavored, rice-like grain that is a rich source of protein.



INGREDIENTS

  • 1 cup quinoa, uncooked
  • 1 3/4 cups canned chicken broth, undiluted
  • 2 teaspoons olive oil
  • 2 medium leeks, finely chopped (use white portion only)
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup yellow bell pepper, chopped
  • 1/4 cup green bell pepper, chopped
  • 3/4 cup carrot, finely chopped
  • 1/2 cup celery, finely chopped
  • 2 teaspoons minced garlic
  • 2 tablespoons parmesan cheese, freshly grated
  • 1/4 teaspoon salt (to taste)
  • 1/4 teaspoon pepper, freshly ground (to taste)
  • 1/4 cup fresh parsley, chopped
