DESCRIPTION
Stuffed with spinach and rice, this is a "fancy" way to serve tomatoes from your garden.
INGREDIENTS
- 4 medium large Tomatoes
- 1 teaspoon olive oil
- 4 cups coarsely chopped fresh spinach
- 2 -3 tablespoons finely chopped shallots or 1 small onion, finely chopped
- 1 garlic clove, minced
- 1/4 teaspoon coriander
- 1 cup cooked basmati rice (I use leftovers)
- 1 ounce shredded mozzarella cheese (or any dry, light colored cheese.)
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- salt and pepper
- 2 tablespoons toasted pine nuts (optional)
