DESCRIPTION

Stuffed with spinach and rice, this is a "fancy" way to serve tomatoes from your garden.



INGREDIENTS

  • 4 medium large Tomatoes
  • 1 teaspoon olive oil
  • 4 cups coarsely chopped fresh spinach
  • 2 -3 tablespoons finely chopped shallots or 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1/4 teaspoon coriander
  • 1 cup cooked basmati rice (I use leftovers)
  • 1 ounce shredded mozzarella cheese (or any dry, light colored cheese.)
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • salt and pepper
  • 2 tablespoons toasted pine nuts (optional)
