  • 4 garlic cloves, minced or pressed
  • 1 tablespoon sesame seeds, toasted
  • 1/4 teaspoon ground cumin, plus more for garnishing
  • 2 lemons, juiced
  • 1 onion, roughly chopped
  • 10 lamb noisettes, about 1 1/4-inches thick
  • 8 tablespoons tahini
  • 1 lemon, zested
  • 1 1/4 cups extra-virgin olive oil
  • 1/2 teaspoon coarse salt
  • 1 tablespoon olive oil
