  • Toasted baguette slices, for serving
  • 2 tablespoons finely chopped gherkins
  • 2 teaspoons Dijon mustard
  • Salt and freshly ground black pepper
  • 1/3 cup mayonnaise
  • 1/2 cup small French lentils, cooked until just tender and drained
  • 1 tablespoon olive oil
  • 9 ounces smoked salmon, long slices (the slices should not be so thin that they fall apart)
  • 2 spring onions, white part only, very finely chopped
  • 1 tablespoon capers, finely chopped
