  • 11/2 teaspoons kosher salt
  • 2 cloves garlic, peeled
  • 2 tablespoons red wine vinegar
  • 20 (8-inch) wooden or bamboo skewers, soaked in water for 30 minutes
  • 3 cups fresh flat-leaf parsley
