  • 1 cup chopped walnuts
  • 2 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • Butter, for greasing the loaf pan
  • 1/2 cup sugar
  • Special equipment: 8 1/4 by 4 1/2-inch nonstick loaf pan (such as Baker's Secret)
  • 1 teaspoon fine sea salt
  • 1 1/4 cups raisins
  • 3 teaspoons active dry yeast
  • *can be found in health food and gourmet stores
  • 1/2 cup warm water (100 to 110 degrees F)
  • 6 tablespoons unsalted butter, at room temperature
  • Flour, for dusting the loaf pan
  • 1 cup brown rice flour*
  • 3 eggs, at room temperature
