  • 3 eggs, at room temperature
  • 1/4 cup heavy cream
  • 1/4 cup maple syrup
  • 3 tablespoons sugar
  • 1/8 teaspoon fine sea salt
  • 1 vanilla bean
  • 2 cups fresh, or frozen and thawed, cranberries
  • 1/2 cup water
  • 1 large orange, zested and juiced
  • 1/2 cup sugar, plus extra, as needed
