DESCRIPTION
This is SO good! It's a project for a day when your feeling creative. Georgians make this bread into a large loaf for special occasions, but street vendors also sell it in smaller, tart-sized diamonds, or "beggars' purses".
INGREDIENTS
- 1 cup milk, scalded*
- 3 tablespoons unsalted butter
- 1 1/2 teaspoons sugar
- 1/2 teaspoon coriander powder
- 1 1/2 teaspoons salt
- 2 teaspoons instant yeast
- 3 1/4 cups unbleached all-purpose flour
- 2 cups cheese (Monterey Jack, Sharp Cheddar or Muenster)
- 1 cup ricotta cheese or 1 cup cottage cheese or 1 cup goat cheese
- 2 large eggs
- 2 tablespoons unbleached all-purpose flour
- 1/2 teaspoon salt, if needed**
- 1/2-1 teaspoon fresh ground pepper
- 1 teaspoon paprika
