- 2 shallots, chopped
- 3 celery ribs, chopped
- 1 garlic clove, crushed
- 2 tablespoons all-purpose flour
- 2 1/2 cups vegetable stock or 2 1/2 cups chicken stock
- 1 1/4 cups milk
- 1 1/2 cups blue Stilton cheese (plus extra to garnish) or 1 1/2 cups dolcelatte (plus extra to garnish) or 1 1/2 cups gorgonzola, crumbled (plus extra to garnish)
- 2 tablespoons walnut halves, roughly chopped
- 2/3 cup plain yogurt
- salt & freshly ground black pepper, to taste
- celery leaves, chopped (to garnish)
