DESCRIPTION

To freeze, wrap each baked loaf in foil, then place in a zip-top plastic bag. They will keep about 3 months.



INGREDIENTS

  • 5 1/4 cups bread flour, divided
  • 4 cups whole wheat flour
  • 1 cup soy flour
  • 1 tablespoon salt
  • 2 packages dry yeast (about 2 1/4 teaspoons each)
  • 3 1/2 cups warm water (100° to 110°)
  • 1/2 cup honey
  • 1/3 cup olive oil
  • Cooking spray
  • 1 tablespoon unsalted butter, melted
