I found this recipe in a magazine several years ago and finally made it last month. It is a very pretty gingerbread cake that tastes delicious.
INGREDIENTS
- 1 lb pear
- 2 tablespoons fresh ginger, peeled, grated, divided
- 1 tablespoon lemon juice
- cooking spray
- 2 tablespoons sugar
- 1/2 cup brown sugar
- 1/4 cup butter, softened
- 1 large egg
- 1/2 cup low-fat buttermilk
- 1/4 cup molasses
- 1 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon dry mustard
- 1/4 teaspoon clove
- 1/4 teaspoon nutmeg
- 1 teaspoon powdered sugar
- mint leaf (optional)
- raspberries (optional)
