- 4 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon mixed spice
- 1 teaspoon salt
- 1 cup cooking oil
- 3 large eggs, the largest size
- 2 teaspoons vanilla
- 2 cups granulated sugar
- 1/2 lb crushed pineapple, canned**
- 2 cups finely grated carrots
- 1 1/2 cups desiccated unsweetened coconut
- 1/2 cup walnuts, broken up
