• 1 (14-ounce) package firm tofu, drained and cut into 1-inch cubes
• 2 tablespoons fresh lime juice
• 1 teaspoon ground turmeric
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper
• 2 teaspoons olive oil
• 2 cups thinly sliced onion
• 1 cup light coconut milk
• 1 to 2 tablespoons red curry paste
• 1 cup shelled green peas (about 1 pound unshelled) or frozen green peas, thawed
• 1/2 cup chopped yellow tomato
• 4 cups hot cooked long-grain rice
