  • 4 ounces wide rice noodles or linguine
  • 1/4 cup warm water
  • 1 tablespoon seedless tamarind paste*
  • 3 tablespoons light brown sugar
  • 3 tablespoons fish sauce
  • 1 to 2 teaspoons chili-garlic sauce
  • 3 tablespoons plus 1 teaspoon stir-fry oil or vegetable oil, divided
  • 3 garlic cloves, minced
  • 1/2 pound peeled and deveined shrimp with tails
  • 1 egg, lightly beaten
  • 2 carrots, cut into thin strips
  • 3 green onions, coarsely chopped
  • 1 cup bean sprouts
  • 1/4 cup peanuts, chopped
  • 1/4 cup very lightly packed fresh cilantro leaves
  • Lime wedges
