Don't dilute your dressing: Drain that pasta really well before tossing it with the other ingredients. Here, the orzo needs to sit in a colander for a few minutes to be sure it's sufficiently dry. Then, if you want to be especially careful, give it an ext



INGREDIENTS

  • 1/2 pound orzo (about 1 cup)
  • 1 pound large shrimp, shelled and halved lengthwise
  • 1 tablespoon lemon juice
  • 1 tablespoon red- or white-wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh-ground black pepper
  • 1 tablespoon chopped fresh oregano, or 1 teaspoon dried oregano
  • 1/3 cup olive oil
  • 4 scallions including green tops, chopped
  • 1/2 cup pitted and chopped black olives, such as Kalamata
  • 1/4 pound feta, crumbled
