Basque Tuna & Potato Casserole

Description

Marmitako is a traditional Basque dish, which I have yet to make myself. I'm told it's delicious and seems very easy to make. I like the one pot idea! I'm unsure of the serving size, it seems like a lot to me for 4 people!

Ingredients

  • 1 fresh chili peppers or 1 pinch cayenne
  • 1 onion, diced
  • 1 teaspoon paprika
  • 1/2 cup white wine (optional)
  • 1/2 teaspoon sea salt (or to taste)
  • 1/4 teaspoon pepper
  • 2 green peppers, diced
  • 2 large Tomatoes, seeded and diced
  • 2 lbs fresh tuna
  • 2 lbs potatoes, peeled and sliced
  • 2 tablespoons fresh parsley, minced (optional)
  • 4 garlic cloves, chopped fine but not minced
  • 5 tablespoons olive oil
  • water
