  • 1 teaspoon minced garlic
  • 1/4 cup rice vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1/2 to 1 teaspoon freshly ground black pepper
  • 1/2 pound reduced-fat firm or extrafirm tofu, drained and cut into 1/4-inch cubes
  • 2 1/2 tablespoons cornstarch
  • 4 large egg whites, lightly beaten
  • 1/2 cup chopped green onions
  • 1/4 cup minced fresh cilantro
