Marinate budget-friendly flank steak in a sweet and tangy bourbon sauce, then grill until done.   Serve with the homemade garlic-chive mashed potatoes and a mixed green salad.



INGREDIENTS

  • 1/4 cup packed dark brown sugar
  • 1/4 cup minced green onions
  • 1/4 cup bourbon
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup Dijon mustard
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon Worcestershire sauce
  • 1 (2-pound) flank steak, trimmed
  • Cooking spray
  • 1/2 teaspoon cornstarch
  • 3 pounds small red potatoes
  • 6 garlic cloves, peeled
  • 1/2 cup reduced-fat sour cream
  • 1/3 cup 2% reduced-fat milk
  • 2 1/2 tablespoons butter
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh chives
  • Garnish:
  • 8 fresh chives, cut into 1-inch pieces
