DESCRIPTION
Using no boil lasagna, this lasagna can be done and ready for the table in just a couple of hours.
INGREDIENTS
- 12 no-boil lasagna noodles (1/2 pound)
- 1 (12 ounce) can evaporated milk (1qt milk...omit can milk and chicken broth)
- 2 cups chicken broth
- 1/2 cup butter
- 1/2 cup flour
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon nutmeg
- 3 garlic cloves, minced
- 3 tablespoons parsley, chopped
- 1 tablespoon herbes de provence
- 3 tablespoons olive oil
- 2 medium leeks or 3 large shallots, sliced into thin rings
- 1 1/2 lbs baby portabella mushrooms or 1 1/2 lbs brown button mushrooms
- 1/2 lb shiitake mushrooms or 1/2 lb mushroom, in season
- 2 cups shredded parmesan cheese
- 8 ounces ricotta cheese
- 2 eggs
- 8 ounces mozzarella cheese, sliced
- 1 cup shredded asiago cheese
