This is delicious on toasted crostini and topped with fresh basil. It also works well as a sandwich spread and can be made up to three days ahead.

- 1 garlic bulb
- 1 tablespoon olive oil
- 2 cups fully cooked, shelled edamame (green soybeans)*
- 1/2 cup ricotta cheese
- 1/4 cup chopped fresh basil
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- Assorted fresh vegetables
