DESCRIPTION
This is a perfect light dish for spring or summer. I used bay scallops and reduced the cooking time to 2 minutes per side. An easy way to season the scallops is to put them in a plastic bag along with the coating mixture, and just shake the bag a few time
INGREDIENTS
- 24 asparagus spears, trimmed
- 2 tablespoons flour
- 1/2 teaspoon Old Bay Seasoning
- 1/2 teaspoon paprika
- 3 tablespoons butter, divided
- 1 lb sea scallops, rinsed and patted dry
- 1/2 cup dry white wine
- 3/4 teaspoon dried dill weed
- 1 lemon, quartered (optional)
