- 1/4 cup extravirgin olive oil
- 2 large eggs
- 2 teaspoons grated lemon rind
- 1 cup unsweetened apple juice
- 1/2 cup golden raisins
- 1/2 cup fresh cranberries
- 1 3/4 cups finely chopped, peeled pear (about 2)
- 2 teaspoons fresh lemon juice
