  • 1 tablespoon lavender leaves, finely chopped
  • 1 tablespoon shallot, finely chopped
  • 1/4 teaspoon salt
  • 3 tablespoons apple cider vinegar
  • 36 ounces steelhead trout
  • flour (for dredging)
  • salt and pepper
  • vegetable oil
