DESCRIPTION
This recipe makes enough for second helpings (about four and one-half dozen cream puffs). Unfilled puffs can be frozen up to one month. The filling can be refrigerated, covered, for two days, but don't add the whipped cream until just before piping it int

- 3 Bartlett pears (about 1 1/2 pounds total)
- 6 large egg yolks
- 1/3 cup sugar
- Pinch of salt
- 2 tablespoons cornstarch
- 1 2/3 cups whole milk
- 1 tablespoon unsalted butter, softened
- 1/2 cup heavy cream
- Pate a Choux Puffs
- Caramel Pear Slices
