  • 6 tablespoons plus 2 teaspoons pimenton (wood-smoked Spanish paprika)
  • 3 tablespoons coarse salt, plus more for seasoning
  • 3 1/2 teaspoons anise seeds, finely ground
  • 1 1/2 teaspoons dried thyme
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons ground coriander
  • 1 1/2 teaspoons sugar
  • 1 teaspoon freshly ground pepper, plus more for seasoning
  • 2 cups dry posole
  • 3 dried bay leaves
  • 4 sprigs fresh thyme
  • 1 medium and 1 large onion, sliced
  • 6 cloves garlic, plus 2 cloves sliced garlic
  • 2 tablespoons olive oil
  • 3 cups fresh cranberry beans
  • 2 pounds smooth winter squash, such as Hubbard, Cinderella, or buttercup, cut into 2-to-3-inch irregular-shaped pieces
