- 6 to 8 small heads of fennel, trimmed and thinly sliced crosswise
- 1/4 cup whole parsley leaves
- 1 tablespoon extra-virgin olive oil

- Freshly ground black pepper
- 1 teaspoon bee pollen (optional)
