DESCRIPTION

This dish is a great way to finish off cold leftover rice, which holds its shape better than freshly cooked rice does.



INGREDIENTS

  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 4 teaspoons vegetable oil, divided
  • 1 large egg, lightly beaten
  • 1 small carrot, thinly sliced
  • 1 scallion, thinly sliced
  • 1 tablespoon minced peeled fresh ginger
  • 1 clove garlic, minced
  • 1 cup cooked rice, cold
  • 1 cup baby spinach
