- 1 1/4 cups coarse yellow cornmeal, such as Goya
- 3/4 cup all-purpose flour
- 1/4 cup sugar
- 1/4 cup chopped fresh sage leaves
- 2 teaspoons baking powder
- 1 teaspoon coarse salt
- 1/2 teaspoon baking soda
- 1 stick plus 1 tablespoon unsalted butter, divided
- 1/4 cup whole milk
- 1 cup low-fat buttermilk
- 2 large eggs
- 1/4 cup honey
