Ingredients

DESCRIPTION

These miniature tarts, made by lining muffin-tin cups with pastry squares, contain pumpkin-pie spices (cinnamon, clove, ginger, nutmeg) but not pumpkins; instead, a sweet custard forms the filling.



INGREDIENTS

  • formed into a 1/2-inch-thick rectangle instead of 2 disks Test-Kitchen Piecrust
  • All-purpose flour, for surface
  • 1 large egg, lightly beaten, plus 6 large egg yolks
  • Fine sanding sugar
  • 1/3 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon freshly grated nutmeg, plus more for garnish
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon salt
  • 1 cup heavy cream, plus more, whipped, for serving
  • 1 cup whole milk
